The market in our tradition, represents a true lifestyle. Once inside it seems to immerse itself in a world where comedy, tradition and simplicity reign. Then I wondered: why not create a tour of the market where you can taste a pizza called ^A wallet^? We Neapolitans, during
our walks to the market we lose much of our time but in order not to give up lunch we entrust ourselves to the pizza A wallet.
It seems to have been invented
the Pizzeria Port'Alba, founded in 1738 but it is obviously impossible to go back to the real origin. It most likely dates back to the middle of the last century and we deduce it from the "Ventre di Napoli" by Matilde Serao. The founder of Il Mattino has codified the food from the street of Naples of the early '900, a book designed for the poor. The great absence of this book is precisely the pizza to the wallet, because at the time the pizzas were large and were sold to slices, as in America. It reads: "The
pizza that has bottega, in the night, makes a large number of these scruples round, of a thick pasta, that burns, but does not cook, loads of pomidore almost raw, of garlic, of pepper, of wherever: these pies in the dark are also the fields of the dark and the dark past.
